Recipe-- Frittata

Frittata

The Frittata is a great way to use leftovers and feed yourself at 4 am

Ingredients:
1-2 Tbsp Extra Virgin Olive Oil
1 small onion, diced
3 large cloves of garlic, minced
2 cups of diced vegetables (asparagus, zucchini, bell peppers, green onion, artichoke hearts, spinach...)
1/2 cup diced meat (ham, bacon, sausage...)-- OPTIONAL
1/4 cup diced fresh dill-- OPTIONAL
8 eggs, lightly beaten with 1/4 cup water
1 cup shredded cheese

Put oven on broil. Heat a cast iron skillet with 1-2 Tbsp olive oil. Add onions and cook until golden brown. Add garlic and cook for one minute. Add other veggies and cook until soft. Add meat. Spread mixture evenly over the bottom of the pan and pour egg mixture over the top. Cook for a few minutes until the bottom starts to set. Put under broiler and watch carefully until the top is just starting to set. Sprinkle shredded cheese on top and watch until cheese is starting to get golden and bubbly. Take out and let sit for about 5 minutes. Cut into wedges and enjoy.

I would like to suggest that this is not a great way to feed yourself at 4am unless you are intoxicated. But if you are intoxicated and still conscious at 4am, it is indeed a great way to feed yourself.

Ahhhh, sounds tasty. I actually like quiche a lot and this seems similar. Surely you and Swoof couldn't eat an entire one of these on your own. Perhaps you could invite other Lincolnites over for a taste of this eggy delight?


Anyway, your recipe evoked memories of another classic breakfast recipe: fried hash brown potato mounds with onions and cream cheese filling, an egg binder and sour cream on top. Yes... Not the healthiest of food but very good.

I'm not sure I've ever been drunk at 11am on Sunday, but regardless, I'm rarely awake at that time. I'm guessing the peak frittata Jack Jackson time would be 2am early Friday morning (late Thursday night for you who don't believe the day changes until you wake up). Unfortunately, I'm rarely gumptious enough to make meself something like that at that time.
